Francesco Sarno's career began with the discovery of a cuisine rich in authentic products at a typical Campania osteria. Over time, he moved on to different restaurant experiences, specialising in gourmet cuisine and luxury hospitality, covering roles from head chef to sous chef in a variety of contexts: at Acquapetra Resort and SPA, a luxury hotel in the province of Benevento up to the best Italian restaurants, such as the Michelin-starred I Portici Hotel in Bologna with Chef Agostino Iacobucci, Il Castello di Spaltenna, one Michelin star, in the brigade of Chef Vincenzo Guarino, and the Capri Palace, two Michelin stars.

That of Francesco Sarno is a passion that dialogues with the Italian territory in a journey that started from the places of his history, Campania, passing through Tuscany, Lombardy and Emilia-Romagna until arriving in the precious village of Varenna, on Lake Como, at the Hotel Royal Victoria and Villa Cipressi of R Collection Hotels Group.

Francesco Sarno is the Chef of the two restaurants of the Hotel Royal Victoria: the Victoria Grill, located in the historic piazzetta of the ancient village of Varenna, open to both hotel guests and external customers, and the Gourmet Restaurant VISTERIA, with an unparalleled view of Lake Como and a contemporary and refined interior design ambience within a historic architectural and cultural building. The Chef will also oversee banqueting activities at Villa Cipressi in Varenna and the Bar Veranda and Bar Giardino.

At the Hotel Royal Victoria's VISTERIA restaurant, the Chef offers contemporary dishes with a hint of Campania's origins using quality buffalo mozzarella, from "caprese al lago" with tomato gazpacho, basil pesto and breaded buffalo mozzarella to the classic tomato, mozzarella and basil gnocchi with aubergine parmigiana, to the revisited spaghetti with fresh seafood pasta, potato and lemon cream and carrot, to tuna tartare with lime mayonnaise and cous cous, to fassona tartare, buffalo stracciata and sun-dried tomato.
